Fish Fingers

Nice chunky herby fish fingers. Nice served with chunky home-made oven cooked chips.

Ingredients

Breadcrumbs
Mixed Herbs (add to taste, I like lots)
Plain Flour
1 Egg
1 Lemon
Salt
Pepper
Olive Oil
Cod or Haddock (thick fillet)

Instructions

  • Juice the lemon onto a deep plate or dish and add salt and pepper to it.
  • Cut the fish into big chunky fingers
  • Marinade the fish for a hour or two in the lemon mixture.
  • Beat the egg and place into a bowl
  • Set aside a couple of handfuls of flour in another bowl (probably don't actually measure this using your hands… It's messy!)
  • Mix the herbs and breadcrumbs together onto a plate (add chives if you like).
  • Remove the fish from the marinade but ensure it has plenty of pepper still on it.
  • Dip the fish in the flour, ensuring it is fully coated and shake off loose flour.
  • Dip the fish into the egg.
  • Now roll the fish in the breadcrumb mixture ensuring it is fully coated.
  • Set aside
  • Heat some olive oil in a pan.
  • Cook the fish fingers until brown (a couple of minutes or so for each side)
  • Place onto paper towels to drain some of the oil off.
  • Serve!

Notes

Could we grill this instead so it's a bit healthier?
Suggestion: Spray a cooking tray with 1cal spray on olive oil.
Heat the oven to 200 degrees Celsius.
Put fish fingers on tray.
Spray tops of fish fingers with cooking oil.
Cook for 10-15 minutes turning half way through cooking.
